How to make smoked organic lamb rice and fried vegetable sauce.

For smoked organic lamb rice:

Lamb (boiled with one teaspoon of salt) – as desired

Rice – 2 cups

Onion (finely chopped) – 2

Baby tomatoes (finely chopped) – 4

Green peppers – 10

Salt – 1 teaspoon

Oil – half cup

Chili flakes – 1 teaspoon

Bay leaves – 2

Ginger and garlic paste – 1 tablespoon

Cumin – 1 tea-spoon

Fennel seeds (crushed) – 1 tablespoon

Black pepper – 1 and 1/2 tablespoon

Star anise (crushed) – 1 tablespoon

Coal (for smoke) – as desired

lamb stock – 4 cups

Biryani essence – 1 teaspoon

Fennel seeds (crushed) – 1 tablespoon

For the Fried vegetable sauce:

Oil – 1 tablespoon

Mustard seeds – ¼-tablespoon

Cumin seeds – ¼-tablespoon

Onion – ¼-cup

Capsicum – ¼- cup

Tomato – ¼- cup

Salt – as desired

Curry leaves – 7 to 10

Curd (whisked) – half cup

Cumin seeds (roasted) – 1/3 teaspoon

Black salt – 1/3 teaspoon

Green chili – 1

Instructions for the smoked organic lamb rice:

  1. Take a Big deep pan and add chopped onions to it.
  2. Cook the onions’ till they are golden brown.
  3. Add bay leaves, black pepper, cumin seeds, and stir.
  4. Once you start smelling the aroma of bay leaves and cumin seeds.
  5.  Add ginger and garlic paste to it.
  6. Now add tomatoes, salt, and chili flakes and cook the spices for five minutes
  7. Once the tomatoes are cooked, add the organic lamb and green chilies.
  8. Keep stirring for 10 minutes till the beef has absorbed spices.
  9. Now add four cups of the lamb stock.
  10. Add the rice to the deep pan and mix it properly.
  11. Wait for the water to fully dry.
  12. After the water has dried, add crushed fennel seeds, crushed star anise, and biryani essence.
  13. Burn coal on another stove for ten to fifteen minutes.
  14. Put the coal in a steel bowl.
  15. Mix the rice and put the steel bowl that has coal in it into the pan.
  16. add a little oil to the coal and close the lid of the pan
  17. After five minutes, dish out the rice.
  18. Your smoke organic lamb rice is ready!

Instructions for the fried vegetable sauce:

  1. Take a frying pan and add oil to it.
  2. Once the oil is a little warm, add crushed mustard seeds, crushed cumin seeds, and curry leaves in the pan and stir them for 1 minute.
  3. Now add green chillies and onion.
  4. Stir nicely.
  5. Add the capsicum and tomatoes with salt.
  6. Stir it for 2 more minutes on medium flame. The vegetables should not be too soft.
  7. Turn off the stove and let the vegetables cool down.
  8. Once it is room temperature, add the vegetables to the curd.
  9. Add cumin seed powder and black salt on top.
  10. Mix nicely.
  11. Your fried vegetable sauce is ready to go with smoked organic lamb rice!
