Ingredients:
- Red chili (dried) – 2
- Organic lamb meat – 500 gram
- Cinnamon stick – 2
- Mace – ½ of the whole piece
- Bay leaves – 2 to 3
- Coriander seeds (powder) – ½ teaspoon
- Whole black pepper – ½ teaspoon
- Cumin seeds – 2 teaspoon
- Soy sauce – 2 teaspoon
- Mustard oil – 3 tablespoon
- Salt – to taste
- Coriander leave (chopped) – as required
- Big sized onions (chopped) – 5
- Onions (cut in rings) – 2
- Red chili powder – 2 teaspoon
- Green chili (cut in slices) – 2
- Garlic cloves – 25 grams or 20 grams
- Turmeric powder – 1 teaspoon
- Chopped ginger – 2-inch
- Yogurt – 4 tablespoon
Instructions:
- To marinate the organic lamb meat, add it to a bowl.
- Add yogurt, half teaspoon of turmeric powder, one teaspoon of red chili powder, quarter teaspoon of salt, green chili, and an onion cut in rings.
- Mix all the ingredients nicely.
- Keep it aside for twenty minutes.
- To make a paste-like consistency of the spices, take a blending jar and add 1 and a half teaspoon of cumin seed powder.
- Add whole black pepper, coriander seeds, mace, cinnamon stick, garlic, ginger, and two tablespoons of water.
- Blend till it has a smooth and thick paste-like consistency and then keeps it aside.
- To make the organic lamb curry, let a pressure cooker heat on medium flame.
- Add 3 tablespoons of mustard oil and let it heat.
- Add bay leaves, dried red chili, and cumin seeds.
- Cook it for five to ten seconds.
- Add onions and fry till it turns brown.
- After the onions are light brown, add turmeric powder, red chili powder and mix it nicely.
- Add the marinated organic lamb meat to the pressure cooker.
- Cook it with the onions.
- Cover the pressure cooker with its lid without using the whistle for five minutes.
- Add blended spicy paste and mix it with organic lamb
- Cover the pressure cooker with its lid again and cook for five to six minutes.
- Once the spices and meat have mixed nicely, add water as you like according to the thickness of the gravy you prefer.
- Add soy sauce and salt as you like.
- Keep stirring.
- Add coriander leaves and cover the cooker with its lid and cook till two whistles on medium flame.
- Once the pressure cooker cools down, open the lid and your organic lamb curry with mustard oil is ready!
- Serve it on a serving plate and garnish it with coriander leaves.
